Pumpkin chutney recipe

Pumpkins are a particular favourite and are as healthy as they are versatile. It is ideal for soups, salads and cakes. But the orange vegetable can also be used to create more unusual dishes: Try our pumpkin chutney! Here is our favourite pumpkin chutney recipe. Cook it up and treat your taste buds to the sweet spice of autumn!

Ingredients

•    1.5 kg pumpkin
•    200 g onions
•    2 cloves of garlic
•    150 g apples
•    50 ml olive oil
•    120 g sugar
•    300 ml apple juice
•    50 g ginger
•    80 ml white balsamico vinegar
•    Spice bag with: Caraway seeds, mustard seeds, cinnamon, cloves and bay leaf
 

Instructions

1.    Clean the pumpkin and cut it into small cubes. Cut the onions and apples into small pieces, chop and grate the garlic. 
2.    Caramelise the sugar by slowly melting it in a large pan over a medium heat until it turns golden brown. This adds a subtle sweetness to the dish.
3.    Sauté the pumpkin cubes with the apple and onion in olive oil, add the apple juice and balsamic vinegar, add the spice sachet, cover and simmer over a low heat for 20 to 30 minutes.
4.    Add the grated ginger for a slightly spicy and fresh flavour. Season to taste with salt, pepper and cayenne pepper.
5.    remove the spice bag and enjoy your delicious pumpkin chutney!
